These are another form of potato pancakes, a trademark street food in the tiny country of Luxembourg. I thought that these might be just like the latkes I made for Israel, but suprisingly they have a different texture and taste (latkes are more crispy and potato chippy). This recipe is just for one, I had them for breakfast.
Gromper…pancakes:
1 x nadine potato, grated
1 x small egg, beaten
1/2 shallot, diced
chives, diced
salt and pepper
Mix all ingredients together and fry gently in a pan with a glug of olive oil. Simple! Eat with applesauce! I didn’t, as I ran out of applesauce, as you do. So I used sour cream instead. Still good!
